Provencal Green Olives
Mustapha's

(Please note: at the time of writing, Mustapha's Provencal Olive were sold out, but check the site for availability)

For those of you who love French cooking and flavors, you have now found the perfect olive to go with roasted herbed chicken, Brie, cornichons, terrines and cassoulets!

Pull out the crusty French bread, the farm fresh butter and a selection of saucissons and cheese and this olive will be the one reached for over and over. Why? Here are the ingredients: cracked green olives, onions, herbes de Provence, lemon, bay leaf, oil, water, salt and lactic acid. Can you taste the herby, rich flavor? Now pair that with an unblemished, meaty but mild olive. Not an olive that is so strong as to get in the way of those wonderful seasonings, but an olive that matches them and makes it a perfect experience.

Too many olives are riddled with preservatives that keep them a bright green and make them crunchy, strong and bitter. Wait till you taste the gentle flavor and texture of these olives…. the way that they were meant to be!

In a 10-ounce glass hex jar with a gold lid, the label is a striking combination of black, red and yellow scrolls and Moroccan tile designs. A narrow banner across the top of the lid and onto the sides of the jar, seal the lid at the same time proclaiming that these are gourmet, imported olives.

From the Atlas mountain range of Morocco, these olives come from ancient groves. You can taste the difference: a warm, melting, mild olive flavor perfectly enhanced by marjoram, oregano, rosemary, savory, thyme, onion, lemon, bay leaf…. mmmmm! Not strong, but wonderfully and subtly complex, you’ll love this sophisticated olive.
