Although the pepper is not named, we believe that these are Malabar black peppercorns which are considered the finest mass market peppercorns in the world. They are not as large as the pungent Tellicherry peppercorns from the same region, but their flavor makes them the perfect all-purpose peppercorns. These medium-sized peppercorns are dark brown and slightly wrinkled and have a peppery, slightly pungent aroma, full toasty-woody flavor and medium to slightly hot finish that lingers.

This peppercorn is perfect for everyday use in spice blends, garam masala, salad dressings, fish, vegetables, meat and poultry. Grind it over pasta with olive oil and roasted garlic or enjoy its perfect peppercorn Zing on mashed potatoes or roasted chicken. It has a full flavor but is not so distinctive or assertive that it overwhelms a dish. If you are a pepper lover, this is a great peppercorn as it is not too hot, and the flavor complements many foods.

Many producers of peppercorns are scalding the pepper berries in hot water and drying them in kilns. These peppercorns though are produced in the time-honored way of drying on mats in the sunshine. It is the heat of the sun that activates an enzyme that turns the berries black or dark brown. At the same time, piperine, a pungent compound develops and along with natural essential oils, the pepper berries turn into spicy and aromatic peppercorns.
