Spring onions are the most pungent tasting of all onions, but there is a way to curb that pungency so that it does not overpower more delicate spring greens and foods.
Wash the onions and remove half of the green tops. Place one onion on a large plate or cutting board and one inch above the white bulb end of the onion, insert a fork. Draw the fork all the way to the green end, creating long, thin strips of onion that are still attached at the white bulb end. You may pierce with a fork and draw the fork to the end several times to created thinner and thinner strips as desired.
Do this with all the spring onions that you will be using and then place the finished onions in a bowl of ice water for five minutes. Remove and dry the onions and use in your cooked recipe or salads. Result? A beautiful looking and more mild tasting onion!
