CITRUSY SORBET WITH FRESH TARRAGON

If you want something sweet but still spring fresh, you’ll love the complexity of the flavors, but the simplicity of the ingredients in this absolutely marvelous sorbet!

INGREDIENTS:

4 large red or pink organic grapefruits
1 cup water
1 cup sugar
1 Tablespoon fresh tarragon; finely minced

Garnish: 1-2 teaspoons fresh tarragon; finely minced, plus rind of one orange or grapefruit finely julienned/chopped.

DIRECTIONS:

Squeeze the grapefruits until 2 cups of juice are collected.

Pour through a sieve into a large bowl.

In a small pan bring water, sugar, and fresh tarragon to a boil, stirring until sugar is dissolved. Simmer 5 minutes. Whisk syrup into grapefruit juice and pour mixture into an ice-cream maker. Process according to directions until mixture is frozen.

Transfer sorbet to an airtight container and put in freezer to harden. Sorbet keeps 1 week.

Serve sorbet garnished with julienned/chopped orange/grapefruit rinds tossed with fresh tarragon to taste. If mixture is too tart, add a small amount of sugar.
