It's just this simple!

1 head of garlic, each clove peeled and roughly chopped
½ cup white vinegar
1 cup extra virgin olive oil

Soak cloves for 15 minutes in the vinegar. Drain, rinse in water then pat dry.  Put oil and garlic in a food processor or blender and gently pulse.  Do NOT puree or you will not be able to separate the garlic out of the oil.

Strain the oil through a clean and rinsed dishcloth.  Discard the garlic solids.  Strain the olive oil again and pour into a sterilized glass bottle that you can cap or seal.  For best flavor, use within one week.

Caribbean Black Bean Soup with Roasted Garlic and Tomatoes

6 garlic cloves, unpeeled
2 Tablespoons extra virgin olive oil, plus more for drizzling
4 whole fresh or canned plum tomatoes, with juice
½ pound Black Valentine or Black Beans, cooked with reserved broth
½ medium yellow or white onion, chopped
1 jalapeno chili, chopped
1 medium carrot, peeled and chopped
1 ½ teaspoon cumin seeds toasted and ground
1 teaspoon dried oregano
½ teaspoon cayenne pepper
2 cups chicken or vegetable broth
Freshly ground pepper
Sour cream for garnishing
1 avocado, pitted, peeled and sliced for garnishing
Fresh cilantro leaves for garnishing
