INGREDIENTS: 1 cup organic spinach 2 cups organic button mushrooms 1 sweet or white onion 1 cup Kalamata olives, pitted 2-3 cloves garlic 2 Tablespoons fresh lime juice 1 teaspoon curry powder ½ cup Parmesan cheese Sea salt and freshly ground pepper to taste
DIRECTIONS:
Clean and trim spinach and mushrooms. Quarter the onions and pit the olives.
Add the onions and garlic to the bowl of a food processor and pulse till well chopped.
Add the remaining ingredients and pulse till spinach is finely chopped and all ingredients are well blended.
Place in a serving bowl, cover and refrigerate till ready to serve. Serve with toasted pita bread, toast points or endive
