CRANBERRY-THYME ENCRUSTED SALMON

Serves 4

INGREDIENTS:

4 6- to 7-ounce salmon fillets
3/4 cup fresh breadcrumbs
1/4 cup dried cranberries, chopped
1/4 cup chopped shallots
3 Tablespoons butter, melted with a squeeze of fresh lemon juice mixed in
2 Tablespoons chopped fresh thyme
2 teaspoons grated lemon peel

DIRECTIONS:

Preheat oven to 375°F.

Oil baking sheet with olive or coconut oil. Sprinkle salmon with sea salt and frehsly ground pepper. Place skin side down on sheet.

In a medium bowl, combine bread crumbs, cranberries, onion, 2 tablespoons melted butter, thyme, and lemon peel.

Season with sea salt and frehsly ground pepper. Spoon onto salmon and press gently to adhere.
Drizzle with remaining melted butter mixed with lemon juice.

Bake 20 minutes till topping is golden and salmon is just opaque in center.
