INGREDIENTS: ½ coconut, peeled For the Marinade: juice of two limes 1 jalapeno minced 1 garlic clove pressed or minced 1 teaspoon salt
DIRECTIONS:
With a potato peeler, cut coconut meat into long, thin strips. Immerse the coconut strips into the marinade. Let marinate one hour. Put coconut and marinade into a serving bowl and serve as an appetizer.
