Serves 4
INGREDIENTS:
2 large sweet onions (Bermuda or Vidalia) 1 Tablespoon extra virgin olive oil 1 Tablespoon soy sauce ¾ cup organic chicken broth 2 ripe mangoes Freshly ground black pepper
DIRECTIONS:
Preheat oven to 350 degrees.
Peel each onion and cut in half across the middle. Oil a baking dish and arrange onions, cut side down. Brush onions with olive oil and soy sauce mixture. Pour chicken broth in baking dish.
Bake 20-25 minutes till golden.
Peel mangoes and cut flesh into chunks. Puree mango flesh in a processor. Put mango puree on four plates. Arrange one onion half on each plate, fanning the onion layers on the puree.
