Serves 4
INGREDIENTS: 2 pounds yellow squash, sliced 2 eggs 1 cup mayonnaise ½ cup green peppers, chopped ½ cup onion, chopped 1 cup Parmesan, grated Sea salt and freshly grated pepper to taste 2 Tablespoons butter
DIRECTIONS:
Preheat oven to 350 degrees
Butter a casserole dish. Saute squash, onions and peppers till just tender. Drain any liquid.
Beat eggs and add vegetables mixing to coat. Pour into casserole dish and dot with butter.
Bake for 30 minutes
