Serves 4
INGREDIENTS: Use prepared pesto for a quick dish, or make your own with the following ingredients: ½ cup fresh basil 2-3 cloves garlic, minced 2 Tablespoons olive oil 1 Tablespoon walnuts or pine nuts 1 Tablespoon Parmesan cheese ½ cup sliced fresh mushrooms ¼ cup sliced onions 2 yellow squash or zucchini (or both), sliced ¼-inch thick
DIRECTIONS:
Blend basil, garlic, olive oil, nuts and Parmesan in a food processor till coarse paste forms.
In a skillet: Heat 1 Tablespoon olive oil. Saute mushrooms, onions and squash or zucchini. Cook till just tender. Stir in pesto and serve.
