INGREDIENTS: Beat the following ingredients with an electric mixer: 1 cup all-purpose flour ½ teaspoon salt 1 teaspoon sugar ¾ cup half and half or cream 1 large egg ¼ cup coconut oil or extra virgin olive oil
Add these ingredients and mix well: 1 medium onion, chopped 1 cup grated sharp cheddar cheese 3 cups grated green zucchini or yellow squash 2-4 teaspoons crushed red pepper flakes (to taste)
DIRECTIONS:
Drop mixture by Tablespoons onto a hot skillet or griddle that is greased with coconut or olive oil.
Cook until golden brown and turn once. Brown remaining side. Drain on paper towels.
Serve hot with a dollop of sour cream with chives if desired.
