SQUASH POTATO BOATS

Serves 4-8

INGREDIENTS:

4 large baking potatoes
2 Acorn squash
6 Tablespoons butter
Cumin to taste
Sea salt and freshly ground pepper to taste
Paprika
1 green onion chopped

DIRECTIONS:

Preheat oven to 450 degrees.

Cut squash in half lengthwise and remove seeds and strings. Wash potatoes and pierce skin with a fork in several places. Bake potatoes one hour and squash 40-45 minutes until tender.

Scoop potato and squash into a bowl preserving the potato skins to fill later with mixture. Mash potatoes and squash with cumin (taste how much cumin you want to include), salt, pepper and butter. Put mixture into potato skins and sprinkle with paprika.

Place and baking sheet and bake till tops start to brown. Sprinkle with chopped green onions as garnish if desired.
