INGREDIENTS:
11/4 lb potatoes 3 TB olive oil 4 tsp chili powder (optional) sea salt, to taste ground black pepper, to taste
DIRECTIONS:
Preheat the oven to 400°F.
Cut the potatoes into quarters lengthwise, then cut into ¼-inch thick wedges. Place in a large bowl and thoroughly coat with the olive oil and chili powder, if using.
Place the potatoes on two large rimmed baking sheets in a single layer. Sprinkle with salt and pepper to taste. Bake for 30-35 minutes until cooked through and beginning to brown.
