Serves 4-6 INGREDIENTS: 4 garlic cloves, peeled and pressed or finely chopped 2 small red chilies, stemmed, seeded and finely chopped 2 green onions, trimmed and cut in thin slices ¼ cup coconut oil ½ cup peanuts 1 cup raw rice, cooked according to directions ¼ cup soy sauce 1 Tablespoon sugar ¼ cup fresh limejuice
DIRECTIONS:
Prepare the garlic, chilies and green onions.
Heat coconut oil in large skillet or wok. Add chilies, peanuts and garlic and stir-fry for one minute. Add onions, cooked rice, soy sauce, sugar and lime juice. Fry 1-2 minutes till rice is hot.
