INGREDIENTS: 3-4 cups thinly sliced red onions 3 tablespoons olive oil peel of 1/4 Mustapha's Preserved Lemon cut into julienne strips 1/3-cup preserved lemon juice or fresh lemon juice to taste 1/2-cup coarsely fresh flat-leafed parsley leaves 1 large garlic clove, minced or pressed 1/4 teaspoon ground coriander Cayenne and sea salt to taste
DIRECTIONS:
Put thinly sliced onions in a bowl of cold water. Soak 30 minutes. Drain onions. Dry with paper towels. Put onions and remaining ingredients into a bowl and stir to mix. Be sure and let stand at least 20 minutes to meld flavors.
