THAI PAPAYA SALAD

Serves 4

INGREDIENTS:

2 unripe papayas, medium size
3 cloves garlic, peeled
4 small red chilies, seeded and stemmed
3 medium tomatoes cut in eighths
1 teaspoon sea salt
4 Tablespoons roasted peanuts
2 Tablespoons sugar
¼ cup fresh limejuice
¼ cup soy sauce

DIRECTIONS:

Peel the unripe papayas, halve lengthwise, and remove seeds. Rinse the halves, pat dry and cut into slices. Cut slices into thin strips.

In a processor, puree the garlic, chilies and salt. Remove puree and put in a bowl.

In processor, roughly chop peanuts. Add peanuts to puree mixture. Stir in sugar till it dissolves and a paste is formed.

Add lime juice, soy sauce, and season to taste with sea salt.

Gently stir the tomatoes and papayas into the dressing.
