INGREDIENTS: 4 Tablespoons celery seed 4 Tablespoons sea salt 2 Tablespoons dried lemon thyme (or regular thyme) 2 Tablespoons dry mustard, or mustard seed 1 Tablespoon ground ginger ½ Tablespoon dried green peppercorns ¼ Tablespoon white peppercorns 1/8 Tablespoon crushed bay leaf 1/8 Tablespoon ground allspice or allspice berries
DIRECTIONS:
Place ingredients in a coffee or spice grinder or in a blender or food processor. Blend and process till coarsely ground.
Add to melted butter for a dip for boiled or broiled lobster or crab. Baste trout, tuna or swordfish before broiling or grilling. Use in fish stews, soups or casseroles. Add a pinch to salmon mousse or trout pate.
