We just love it when someone else has done all the trial and error and we get to reap the benefits of all their hard work. This supplier knows salmon and over the years they have tweaked and tested a combination of seasonings until they came up with a blend that suits salmon and pleases everyone who tries it.
The ingredients are all organic: organic fennel seed, organic dill weed, organic black pepper, organic lemon peel, organic garlic, organic onion, sea salt, organic red pepper and citric acid. There is no MSG and it is certified Kosher. Their directions are to take one tablespoon of this blend and mix it with ¼ cup of olive oil. Coat the salmon with this mixture and cook. Simple!
We love the way salmon tastes when cooked this way… rich and fresh with just the right spiciness to it. The fennel is an interesting choice as it adds a surprise taste of licorice that is just right with salmon, and the dill and lemon keep it from becoming heavy.
Ever the testers, our team spooned about a teaspoon of this dry marinade blend into ½ cup of sour cream. We let is sit for a little while and then we put it on our Organic Sockeye Salmon Burgers. Wow! With lettuce and tomato and lightly toasted bread, this Secret Salmon Sauce was a hit! We imagine that it would taste great with a little mayonnaise mixed in too! Our next culinary foray will be to mix this blend with some olive oil and Tamari sauce and dip salmon into it or pour it over rice and salmon…sounds like it will work to us!
Each 2 oz resealable pouch includes about 1/2 cup of marinade seasoning, enough for about 10 lbs of fillets or 24-6 oz portions. Frankly, this marinade is so good and can be used so many ways, that you will probably want to get two packages. Our guess is that no matter how you fix this blend, it will taste great on any rich fish like salmon, and it will be fun taste testing it on other fish favorites.
