A Perfect Pear

 

This is one of the more unusual mustards I have ever tasted. The fragrance is very unmustard-like as well as the almost caramel color of it. It has a distinct texture with little chunks in it and if it didn’t say mustard on the label and have the Japanese version of mustard in it, you would taste and taste, and compliment it…but probably not call it mustard as it is like no other mustard you will have encountered.

Now, down to the flavor! I’ll help you along by giving you all the ingredients: organic pear puree, organic rice vinegar, onions, wasabi (wasabi horseradish, mustard), sake, jalapeno peppers, whole mustard seed, organic cornstarch, salt, wasabi oil.

Pretty complex and unusual, the first taste is almost sweet and bland. Then, comes the chew of onions and mustard seeds, followed by a soft kick of wasabi and jalapeno. Then, the final note is fading vinegar. Very satisfying and because it’s so different, you want more to keep experiencing its uniqueness.

On a power scale, this mustard is a five. Not heavily hearty or stone-ground thick, this is a unique condiment that although it has a little heat, is soft but subtly complex. Don’t worry, its not so soft that it will get lost or be ignored, this one of a kind mustard has Zing!

The owner mixes it with cream cheese and spreads it on a cracker, topped by a shrimp and chives. I would go so far as to use it as unusual dip for sushi, and puddle it on a bowl of smoky pumpkin soup. Try it in a sandwich with grilled vegetables and meats, and marvel at the marriage of flavors. This 11-ounce jar is glass with a gold lid and an elegant label of a branch with pears on it. For those looking for something different, this is it. Not too strong, not too bland, this unique take on mustard will surprise and intrigue, but please almost anyone.
