HARISSA AIOLI

INGREDIENTS:

2 egg yolks
1/2 tablespoon Dijon mustard
3/4 tablespoon minced garlic
1/8 cup lemon juice freshly squeezed
1/8 cup Mustapha’s harissa paste
1/4 tablespoon cumin, ground
1/2 tablespoon Kosher salt
1/2 tablespoon freshly ground black pepper
1 quart Mustapha’s olive oil

DIRECTIONS:

Combine all ingredients, except oil, in robot coupe, and process on high 1 minute, until thick.

While motor is running, slowly add oil in a thin stream, and continue to add until entirely emulsified. Scrape down the sides at least 1 or 2 times.

Adjust consistency with water or more lemon juice, and adjust seasoning if needed.
