This cookie looks like a moist, dense oatmeal cookie, but that is where the resemblance to classic ends. Ever had a fig cookie? Ever had a lemon fig cookie? No? Well, neither had any of us!
The moistness and sweetness of the raw fig is the binder and base of this cookie. Its flavor is not predominant, but rather a part of the other ingredients: organic cashews, almonds, organic figs, organic lemon juice, organic agave nectar and sea salt.
The lemon is very subtle but is the needed high note in all the calm of the nuts and figs, and the lemon lovers of our team, while wanting more lemon, or even lemon rind, loved at least the hint of it.
The chew goes on and on in this cookie. This is not a wispy, airy cookie, but a chunky 2-ounce mouthful and handful. Three inches across, this is substantial enough to be a meal in itself, and with the exemplary ingredients, it could almost substitute for one!
No sugar is used in this cookie, just agave nectar, and nothing is cooked over 112 degrees F to preserve the raw, living attributes. This cookie is gluten and GMO-free, and does not contain soy.
All in all, this is chewy, delicious, intriguing, unusual, remarkable and must-try cookie for those of you who have never had a lemon fig cookie. We think you’ll love it.
