ZESTY OREGANO ROAST CHICKEN AND YOGURT

The pairing of the yogurt and mint make this a great dish for a warm evening.

Serves 6

INGREDIENTS:

1 cup Greek-style yogurt
2 Tablespoon fresh mint, chopped
1 Tablespoon extra virgin olive oil
½ teaspoon lemon zest, grated
Juice from one lemon
½ teaspoon freshly ground pepper
½ teaspoon dried oregano
1 whole free-range chicken
½ cup dry white wine

DIRECTIONS:

Preheat oven to 350 degrees.

In a small bowl, mix mint with yogurt and refrigerate.

In a small bowl, mix oil, lemon zest, juice, pepper and oregano.

Cover chicken with the spice mixture.

Pour wine in the bottom of a roasting pan and put chicken into the pan.

Bake 70- 90 minutes till juices run clear. Cover with foil and let rest for 20 minutes.

Serve with minted yogurt.
