Happy Pancake Day!

Kicking off National Pancake Day with three of our favorite purely elizabeth Perfect Pancake Mix recipes! Our mix is made with 5 whole grain flours + 3 superfood seeds, including millet flour, teff flour, buckwheat flour, flax seeds, hemp seeds and chia seeds. This powerhouse mix is certified gluten-free, vegan and non-GMO + packs a total of 5g of fiber and 4g of protein with no added sugar!

A closer look at the 5 nutrient-rich whole grain flours in our pancake mix

Millet flour: Millet is an ancient grain, rich in B vitamins, which helps support metabolism, increase immunity and enhance energy levels. Originating in North Africa, Millet is often thought of as food “for the birds”.

Teff flour: Teff is an ancient grain originating in Ethopia, where it is still a staple of the country’s diet. Traditionally, teff flour was used to make a fermented pancake. This nutritional powerhouse is high in iron (our pancake mix has 15% RDA of iron), protein, calcium and fiber. Iron is essential to delivering oxygen throughout the body and increasing energy levels.

Buckwheat flour: Despite the name, buckwheat is not related to wheat, rather buckwheat comes from the fruit of the buckwheat plant. Buckwheat is rich in zinc, which helps to prevent a weak immune system and regulate blood sugar, as well as B vitamins. Traditionally, buckwheat is used in pancakes and noodles.

Whole Grain Corn Flour: Corn flour is a good source of B vitamins. Corn flour is considered gluten free, although typically it is cross-contaminated in manufacturing. The corn flour we use at purely elizabeth is certified gluten-free and non-gmo.

Garbanzo Fava Bean Flour: Garbanzo fava bean flour contains high levels of protein and fiber. Garbanzo bean flour is traditionally used in Middle Eastern cooking and baking.

Here are three light + fluffy pancake recipes that are sure to make your stomach growl. 

Apple Cinnamon Pancakes

Apple Cranberry Crisp

Ingredients:

Filling:

3 apples (I used gala), peeled and chopped

1 cup cranberries (fresh or frozen)

1 tbsp cinnamon

1 lemon, juiced

1/2 cup coconut sugar

Topping:

1 cup gluten free rolled oats

3 tbsp coconut oil

3 tbsp purely elizabeth pancake mix (or other gf mix)

1 tbsp cinnamon

1/2 cup coconut sugar

Directions:

  1. Preheat the oven to 350°. In a bowl, combine the oats, oil, flour, cinnamon and sugar.  Use your hands to mix until the topping is crumbly. Set aside.
  2. In a large bowl, toss the apples and cranberries with the sugar, lemon juice, and cinnamon, then spread in the baking dish. Sprinkle on the topping and cover with aluminum foil. Bake for 1 hour, or until the topping is golden and the filling is bubbling.
  3. Let cool for 20 minutes, then serve with coconut based ice cream or yogurt.

Pumpkin Oatmeal Pancakes 

Ingredients

1 egg

1/3 cup almond milk

3 tbsp pumpkin puree

½ purely pancake mix

½ purely original oatmeal

3 tbsp coconut sugar

1 tsp pumpkin pie spice

Directions

Whisk wet ingredients in a bowl. Add dry ingredients and gently stir to combine.  Let sit for 5 minutes. Heat a non-stick skillet over medium heat and lightly coat surface with olive oil. Spoon ¼ cup of mixture onto skillet. Cook until pancake begins to bubble about 2 minutes. Flip and cook another 2-3 minutes.

Join Us In Our March Makeover

While here at purely elizabeth we believe you are what you eat, we also believe that overall health and well-being is about more than what you put in your body. March is National Nutrition Month and we want to dedicate it to bettering the health of ourselves, our relationships, our planet and our community.

Below is a calendar of daily tasks to complete and to strive to maintain in your everyday life. All month long we’ll be posting delicious vegetarian and gluten-free recipes, and each Sunday we’ll provide you with a grocery list so you can stock up on the necessary ingredients. We recommend trying to follow a plant-based diet throughout the entire month (that means filling your plate with as many whole grains, veggies, fruits, legumes, nuts and seeds as possible). Our recipes are just a jumping off point, so stock up your pantry and go nuts!

Along with recipes, we’ll also provide nutrition tips, and health + wellness advice (because it really is all about balance after all). Every Monday we’ll offer up one or two key practices to implement into your daily routine that week. Each day is intended to build upon the one before, helping us ditch those bad habits and leaving us feeling energized, happy and positive.

Frozen Chocolate Banana Peanut Bites + A Cookbook Giveaway

Frozen Chocolate Banana Bites

Makes 24-26 bites

Ingredients: 

2 ripe bananas

2 cups vegan chocolate chips

1/2 cup dairy-free milk (almond, coconut, hemp, etc.)

1/2 cup unsalted peanuts, crushed

Directions: 

1. Prepare a large baking sheet by lining it with parchment paper or a baking mat. Set aside.

2. Slice each banana into 1/2 inch thick circles, then set aside.

3. In a small saucepan, melt chocolate and milk over low heat, stirring constantly until smooth. Remove from heat.

4. Drop banana slices into the chocolate four to five at a time, then remove from chocolate using a slotted spoon. Hold each banana over top of chocolate allowing excess to drip off before placing it onto the baking sheet. Repeat this process until all bananas are covered in chocolate. Sprinkle the chocolate covered banana slices with peanuts, then place tray in freezer for at least one hour, until chocolate has hardened.

5. Transfer frozen slices to a resealable container and place back in freezer until ready to serve.

Edible Ginger Snap Lip Scrub

A DIY lip scrub to revitalize your chapped winter lips! This scrumptious recipe is contributed from our friends at Meow Meow Tweet, a small batch natural apothecary based in Brooklyn, NY.  They also happen to make their own lip balms, along with candles, soaps and other fun treats–all 100% natural, vegan and plant-based.

Are you applying lip balm over and over throughout the day? A layer of dry, dead skin on your lips may be acting as a barrier, keeping the moisturizer from soaking in. Using a lip scrub once or twice a week, especially during these cold winter months, is a great way to improve the condition of your lips, allowing the wonderful healing and protective properties of your lip balm to soak in while also smoothing your lips so they are more shiny and vibrant when gloss or color is worn.

This is a simple recipe for a lip scrub that tastes as good as it smells. All you need to do is combine all of the ingredients in a bowl. This scrub can be stored in a sealed jar in the refrigerator for up to 2 weeks. Before you use the scrub, pull it out of the refrigerator and let it stand at room temperature for 15 minutes.

DIY RECIPE: 

made from Simple Kitchen Ingredients 

¼ c turbinado or vegan brown sugar

¼ c cornmeal

1 t maple syrup

1 t virgin coconut oil, melted

½ t ground ginger

1 pinch ground cinnamon

Using a lip scrub is quick and easy. On wet lips, massage a teaspoon amount of scrub in small, circular motions for 1-2 minutes. Rinse (lick) off with warm water and pat your lips dry, before applying your favorite balm or lipstick.
